Recipe for Aunt Linda's Excellent Oatmeal

Chocolate Chip Cookies

Actual Cookie from recipe

As mentioned in Dispatch numbers 3 , 45 , 50 , and 107

(1) Cream together ...

  • 1 cup of Golden Crisco Shortening

  • 2/3 cup of white sugar

  • 1 cup of brown sugar

 

(2) Add ...

  • 2 eggs

  • 1 1/2 tsp of vanilla

   

(3) Then mix in ...

  • 1 1/4 cup flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 1/2 cups of quick oats

(4) Fold in ...

  • 1 cup of jumbo chocolate chips

Linda makes large cookies, measuring out each one with an ice cream scoop and flattening slightly. Bake them at 350 degrees for 8 to 10 minutes. Do not overcook! Take them out when they still look underdone, and they will stay moist and chewy. Cool on racks.

For Oatmeal Raisin version, substitute 3/4 cup raisins for chocolate chips and add 1/8 tsp nutmeg when adding flour.

This recipe doubles easily and cookies freeze well.
